Recipe of the Week! Chicken Pilaf for Hungry Kids & People

Chicken Pilaf for Hungry Kids & People— this recipe comes from the Dynamite Chicken cookbook by Tyler Kord. This is one that we LOVE for a delicious, nutritious, and pretty easy week night meal. For two people we typically cut the recipe in half but it could easily be doubled or tripled for a larger family. In a stockpot, combine the chicken thighs, stock, rice, garlic, butter, salt, fennel seeds, cardamom, and bay leaves. Bring the mixture to a boil over high heat, turn the heat to low and simmer. In a small sauce pan, toast the orzo over medium high heat, stirring regularly, until lightly brown and fragrant, 5 to 7 minutes. Add the toasted orzo to the pot...

Why You Should Be Making Stock with Nutrient Dense Stew Hens

First of all, what is a stew hen?  Stew hens are retired egg layers, typically a few years old. In the case of our birds, they've lived their ENTIRE life free ranging outside (only sleeping in a coop at night for predator protection), eating grass, foraging, and receiving a high quality grain ration. Since these birds are older with more connective tissue, they need to be cooked in a slow cooker in order to break it down.  Because these birds have had access to such a nutrient rich diet, they are PERFECT for making an absolutely delicious stock. If you're worried about how fast you'll go through chicken stock, especially in these warmer months don't worry it's super easy to...

Our chicken thighs come 5 in a pack, about 3.5 lbs total which is perfect for a big family dinner or a few meals for two people. Here's a few reasons we love them-- dark meat has high quantities of iron and zinc thighs are packed with flavor (we think ours are especially flavorful since these birds foraged, eat a diverse diet, and were out on grass) thighs are more economic option they are AWESOME in the slow cooker with just about any type of sauce or marinade We'll be including...
